chocolate chip banana pancakes

The texture of these pancakes is simply chef's kiss! So, while you might glance at the ingredients and think, "Ugh, three different flours," that's precisely where the magic happens. Trust me, it's worth it because I grew up on banana chocolate chip pancakes, and this healthified version ticks all the boxes for me.

ingredients:

  • 1 ripe banana, sliced

  • 1/2 cup almond flour

  • 1/3 cup tapioca flour

  • 1/4 cup coconut flour

  • 1/2 tsp baking soda

  • 1/4 cup nut milk

  • 1 tbsp maple syrup

  • 1 tsp apple cider vinegar

  • 1 tsp vanilla extract

  • 3 eggs, whisked

  • Pinch of sea salt

  • Sprinkle of Lily’s or Hu’s chips

  • Coconut oil cooking spray

here’s how you make iT:

  1. In a small bowl, mash the banana until smooth. Then mix in the eggs, maple syrup, vanilla extract, apple cider vinegar, and nut milk. Mix well.

  2. In a separate bowl, combine the flours, baking soda, and sea salt. Mix well.

  3. Combine the wet and dry ingredients.

  4. Spray a nonstick pan with coconut oil and then scoop the batter onto a the pan. Sprinkle the top of the pancakes with chocolate chips.

  5. Cook the pancakes until the batter starts to bubble and pancakes begin to puff. Flip and cook the pancakes until they are slightly golden brown.

  6. Serve hot with a dash of organic maple syrup or raw honey or opt for Greek yogurt for a high protein option.
